Aronia Jam

With the right sweetness, Aronia is quite tasty. But don't skimp on the sugar. Really.  Also while the deep color is a signal aronia is super-healthy, it's also super-stainy. Be forewarned, this stuff could be a dye. (I am sure the people at Rit are looking into this, assuming Rit Dye made it out of the 1970s.) If you do see a it of purple on your fancy quartz countertop, rub it with a bit of baking soda to remove the purple.

Ingredients

  • 3.5 cups aronia puree
  • 2 Tablespoons lemon juice
  • 1 package pectin                  
  • 4 cups of sugar
  • 1.5 cups water

Steps

PUREE

Puree the berries until you get 3.5 cups of slop

MIX

Mix 1/2 cup sugar with the pectin

JAR

Heat the mixture of berry slop, water, lemon juice, and pectin (with .5 cup sugar). Bring it to a rolling boil.

ADD
Add the remaining 4 cups of sugar. Bring it back to full boil for 1 minute or so.

CAN

Pour into jam jars, screw on lids following usual canning instructions. Hot water canning bath for 10 minutes.
